Capsicum and Chilly Colour (Paprika)

The oleoresin is obtained by solvent extraction of the dried comminuted fruit with or without seeds and subsequent removal of solvent. Liquid fractionation of the oleoresin involves chilly colour and colour + pungency fraction. Chilly colour equates with paprika oleoresin.

Pepper

Extraction of Oleoresin Black pepper is obtained by solvent extraction of the comminuted dried black pepper berries and subsequent removal of solvent. Corresponding process of a blend of black pepper berries and activated carbon gives the decolourised oleoresin. White pepper oleoresin are derived by solvin extraction of white pepper
